Oils have different compositions of saturated, monosaturated and poly unsaturated fats impacting their nutritional composition. Fat emulsions are a mixture of oil and water often stabilized by emulsifying agents to prevent separation. Some commonly used products like mayonnaise, creamy sauces and salad dressings are emulsions.
